Chocolate Chips Batons

Deepavali, the Festival of Lights for Hindus, is fast approaching. It is an important festival that signifies the victory of light over darkness and is celebrated by Hindus worldwide. I am sure most of you must be cracking your heads as to what to bake or cook for this auspicious event.

Chocolate Chips Cookies are all time favourites with kids and adults. Here is a simple recipe that would allow you to experiment. You can use it as the base recipe and omit the chocolate chips and almond, and substitute with other dried fruits and nuts if you want. You can also add grated orange or lemon zest.

Preparation time:   45 minutes
Cooking time: 20 minutes
Serves: 8
360 g plain flour
180 g icing sugar
¼ teaspoon fine salt
50 g corn flour
240 g Q.B.B. Pure Ghee, chilled
100 g mini chocolate chips
40 g blanched almonds, coarsely chopped
3 egg yolks, lightly beaten
2 egg yolks beaten with 1 tablespoon water (for brushing on cookies)
  1. In large bowl, sift together the flour, icing sugar, salt and corn flour.
  2. Rub in the Q.B.B. Pure Ghee till the mixture resembles coarse bread crumbs.
  3. Stir in the chocolate chips and chopped almonds.
  4. Add the beaten egg yolks and knead lightly to form a soft dough.
  5. Wrap the dough in cling wrap and keep refrigerated for about 30 minutes.
  6. Preheat oven to 180°C.
  7. Roll out the chilled dough in between 2 sheets of plastic until 0.5 cm thick.
  8. Cut into batons, rectangles or squares, and place on baking trays lined with non-stick baking paper.
  9. Brush lightly with the beaten egg yolks. You can omit this step if you desire.
  10. Bake for 15-20 minutes or until golden brown.
  11. Place on wire racks to cool it thoroughly before storing in air tight container.
