Kimchi Fried Rice

This spicy and delicious fried rice is very easy to make. Kimchi is available in almost all supermarkets these days. Kimchi is Korean-style spicy pickled vegetables.  As far as possible, use rice that has been chilled overnight when making fried rice.

Preparation time:   20 minutes

Cooking time:   15 minutes

Serves:   4

2 tablespoons Q.B.B. Pure Ghee

1 onion, chopped

3 cm ginger, julienned

4 garlic cloves, minced

200 g thinly sliced chicken fillets

750 g cooked jasmine rice (preferably kept overnight in the fridge)

200 g kimchi, chopped

2 tablespoons liquid from kimchi

160 g peas

1 teaspoon Chinese sesame oil

4 tablespoons soy sauce

¼ teaspoon chilli flakes or ground black pepper

2 tablespoons finely chopped spring onion

METHOD

  1. Heat Q.B.B. Pure Ghee and sauté the onion, ginger and garlic until aromatic.
  2. Add in the chicken fillets and sauté, stirring often until chicken is lightly browned.
  3. Add in the rest of the ingredients except the spring onions and stir fry for about 3 minutes.
  4. Dish out and serve, topped with chopped spring onion.
