Peri Peri Chicken

The word Peri Peri comes from the Swahili word Pili Pili, which means spicy chilli.  Therefore this dish is best when made spicy hot.  But then you can totally remove the bird eyes chillies from your recipe if you want to.  You must try this recipe!  Watch video:   http://youtu.be/tes9ULc7xso

 Preparation time:  overnight

Cooking time:  20 minutes

Serves:  4

15 g garlic cloves

15 g peeled ginger

10 g bird eyes chillies

100 g melted Q.B.B Ghee

30 g Tabasco sauce

5 g chilli powder

3 g coriander powder

40 g tomato paste

40 g mayonnaise

5 g salt

500 g chicken, skinned and cut into cubes

Q.B.B ghee for basting

 METHOD

  1. Place all the ingredients except the chicken into a blender and blend till smooth.  Pour into a bowl.
  2. Add in the chicken pieces and massage and marinate the chicken for 8 hours or more in this marinade.
  3. Skewer onto bamboo skewers and cook on grill for 5 minutes on each side basting it occasionally with Q.B.B Ghee.  Alternatively, you can roast in a preheated oven of 200°C for 20 minutes or until the chicken is cooked through.
  4. Serve hot with rice or eat it on its own.
