Salsa Verde Pizza

I like home-made pizzas. Firstly, you can make the dough anyway you want and secondly you can top it up with any ingredients of your choice. Being an Asian, of course I would want a bit of a “kick” in a pizza. Sometimes I would fry some chopped red chilli padies and sprinkle it on the pizza; at times I would just sprinkle lots of coarsely pounded black peppercorns. Salsa Verde pizzas have an interesting taste to it. I guess it is the combination of the saltiness from the chopped olives and the sourness from the capers. Here I am sharing my favourite pizza recipe made with Q.B.B. ghee. Try it and let me know your thoughts.

TO MAKE A BASIC PIZZA DOUGH
Preparation time: 15 minutes
Serves: 3

Ingredients
380 ml warm water
2 teaspoons (1 sachet) instant yeast
1/2 teaspoon caster sugar
600 g plain flour
1 teaspoon salt
60 g Q.B.B. ghee, melted
Some melted Q.B.B. ghee for brushing

Method
1. Place the first 3 ingredients in a bowl and set aside for 5 minutes for it to froth a little.
2. Place flour and salt in a bowl; make a well in the centre and pour in the yeast mixture and the melted ghee and mix together with floured hands to form dough.
3. Knead the dough on a lightly floured surface for about 10 minutes or until it feels smooth and elastic.
4. Divide the dough into 4 equal parts and place on a floured tray. Cover it with a damp cloth and keep aside in a warm place for about half an hour or until the balls have doubled in size.
5. Press down on each dough ball into a round on a floured surface and roll them out to a 25 cm diameter circle.
6. Place them on a non-stick paper lined baking sheet. Make a border around each circle by pressing 2 cm inside the edge of the dough with your fingers.
7. Spread the pizza bases with toppings of your choice and bake immediately.

TO MAKE THE TOPPING
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves: 1

Ingredients
1 pizza base dough, rolled out (from Basic Pizza dough)
100 g mozzarella, sliced
15 g chopped parsley
10 g capers, rinsed and dried
70 g pitted black olives, chopped
20 g cloves of garlic, finely chopped
2 tablespoons melted Q.B.B. ghee
Sea salt for sprinkling
Arugula or other salad leaves to serve

Method
1. Preheat oven to 220°C. Place a pizza pan in the oven for at least 30 minutes to heat it.
2. Remove hot pizza pan from the oven and place pizza base on it.
3. Very quickly sprinkle with the chopped parsley, capers, olives and chopped garlic.
4. Drizzle with Q.B.B. ghee and sprinkle with salt.
5. Place in oven and bake for 12-15 minutes or until crisp and golden.
6. Top with arugula before serving.
